Enchiladas Especiales

Makes 20.

Enchilada Sauce

What you'll need:
  • 2 ancho chiles
  • 5 guajillo chiles
  • 1 large garlic clove
  • 1 Roma tomato
  • 1/8tsp Italian seasoning powder
  • 1¾ cups water
  • ½ tsp salt
  • 1-2 Tbsp Gringo Bandito

What you'll need to do:
  1. Slice open chiles and remove seeds.
  2. Place chiles in a small saucepan and cover with water. Add the garlic and tomato to pan and cook over low heat.
  3. Add Italian seasoning. Cover pan and bring to boil. Cook for additional 10 minutes.
  4. Drain and save water from pan. Put the goods into a blender. Add 1¾ cups water, then add ¼ cup of water from the pan.
  5. Blend at high speed for 30 seconds. Add salt. More blending. Add Gringo Bandito and stir with love.
  6. Set aside and start on the enchilada meat.

Enchilada Meat

What you'll need:
  • 2 chicken breasts: cooked and shredded
  • ¼ cup Canola oil
  • ¼ cup chopped onion
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 2 Roma tomatoes, chopped
  • ½ tsp salt
  • 4 oz shredded mozzarella cheese
  • 2 Tbsp Gringo Bandito hot sauce

What you'll need to do:
  1. Get the stove going at medium heat. Add oil to skillet. Cook chicken and onions over low heat for 10 minutes. Shake in paprika and garlic powder. Stir and continue cooking.
  2. When the chicken's a little dry drop in the tomatoes and an additional 1/8cup oil. Cook for another 10 minutes.
  3. Shake in salt to taste. Crack open your bottle of Gringo Bandito again and pour in a couple tablespoons.

Building the Enchilada

What you'll need to do:
  1. Preheat oven to 350 degrees. Warm tortillas in grill pan (or microwave) on medium.
  2. Dip tortillas, one at a time, into enchilada sauce.
  3. Place in glass casserole dish, spoon in chicken, and roll it up. Okay, now do that again 12 times or so.
  4. Spoon enchilada sauce over enchiladas in dish. Sprinkle with mozzarella cheese.
  5. Cover with foil. Bake at 350 for 30 minutes. Top with Gringo Bandito and salsa. ¡Buen provecho!
